For the most part, the Fletching Table in Minecraft serves a single purpose: to give lazy, unemployed villagers a job. Villagers who are assigned to a Fletching Table will become fletchers. Villagers will do this on their own, though they can also claim Fletching Tables if there aren’t enough job sites elsewhere.
With that said, the Fletching Table isn’t solely some sort of roleplaying block; it does provide a service to you. Unlike a Crafting Table, Fletching Tables aren’t used for crafting, but rather for trading. If you speak to a fletcher at a Fletching Table, they will trade ranged-based items to you, such as:

- Feathers
- Tripwire Hooks
- Arrows

- Enchanted Bows
