Switching targets in Dragon Ball Z: Kakarot is fairly simple. All you need to do is flick the right analog stick to the left or right.
Doing so will change your locked-on target to whichever enemy is closest to you in the direction you flicked the analog stick, and will keep you locked on to that enemy until you flick the right analog stick again.
Best of all is that you can change your desired target at any time, closing in on and keeping track of whichever enemies you choose at your discretion.
When to Switch Targets During Battle

If you find yourself being hit with attacks from off-screen, then it might be beneficial to switch your target to the enemy currently out of your sight. Doing so can help you get a better grasp on your enemies’ positions, and allow you to better control the battlefield.
Likewise, switching between the targets your aware of can help you control how they move. Should an enemy start to move out of your area of vision, you can switch your lock-on to them and position your self in a way that forces them toward your other targets, making it easier to deal damage to all of them in quick success.
