In general, to gain access to new courses in New Pokemon Snap, you’ll need to level up the variations of each course that you do have access to.

To gain access to the Night version of Blushing Beach in New Pokemon Snap, you’ll need to reach level 2 in Shiver Snowfields (Night)

To level up course variations, you’ll need to gain expedition points by getting higher scores on Pokemon photos. You can get higher scores by using Fluffruit to try and get Pokemon out of hiding and have them do some unique actions. You can also get higher scores by snapping photos of new Pokemon for the first time. In general, though, take the best pictures you can of as many Pokemon as you can and submit them to Professor Mirror.
