Fishing spots are easy to find and are usually dotted all over the map, marked by an icon of a white fish on a light blue background. You start with a rod so there isn’t any work to do to start, simply approach the designated spot you want and hit the interact button.

As you can see, the menu gives a breakdown of your chances to catch each type, with a recommended proficiency level also given. The recommended level means that until you meet or exceed it, your only chances are to catch the lowest rarity fish.

Fishing itself is a purely passive activity. Kirito does all of the work and it only requires you to select the rod, the animation and event of catching a fish is all automatic. This makes fishing a lot less intensive than other games, as you are relying purely on probability instead of a mini-game. Catching a fish is a guarantee, there isn’t a failure chance.
