To answer the question at hand simply, there are 28 total jobs in Stranger of Paradise. So, from the three you start with, there will be 25 more to obtain.

Basic Jobs:

  • Swordfighter
  • Swordsman
  • Ronin
  • Pugilist
  • Marauder
  • Mage
  • Duelist
  • Lancer

Advanced Jobs:

  • Warrior
  • Knight
  • Berserker
  • Thief
  • Monk
  • White Mage
  • Black Mage
  • Red Mage

Expert Jobs:

  • Dark Knight
  • Paladin
  • Ninja
  • Assassin
  • Liberator

All of the basic jobs (besides the default three) unlock after you find the weapon type that job deals with. So, for the Lancer you’ll have to find a spear and Ronin you’ll have to find a katana. These are somewhat scripted drops as you progress.

Every single expert job is tied into a trophy/achievement.
