It’s at this moment you need to quickly press LB/ L1 when they’re attacking, and you’ll block and parry their attack.
This will briefly stun them, and if you perfectly counter an enemy attack and then attack them again, you can then launch them into the air with LB/L1 again. This opens up a bunch of combos, not to mention stunning enemies allows you to get a few hits in quickly.
