How to Unlock Founja Jungle (Night) in New Pokemon Snap

In general, to gain access to new courses in New Pokemon Snap, you’ll need to level up the variations of each course that you do have access to.

To gain access to the Night version of Founja Jungle aka the second course in New Pokemon Snap, you’ll need to reach level 2 of your research in Founja Jungle (Day).

To level up course variations, you’ll need to gain expedition points by getting higher scores on Pokemon photos. You can get higher scores by using Fluffruit to try and get Pokemon out of hiding and have them do some unique actions. You can also get higher scores by snapping photos of new Pokemon for the first time.

Obviously, a combination of all of the above will serve you well in moving the game along as quickly as possible. Plus, it’s kind of the entire fun of New Pokemon Snap, so take your time to figure out how to take some nice pictures.
