Slimes do spawn in mangrove swamps, but any regular swamp biome will do. If you are looking for these huge green blobs of slime in your swamp biome, there may be a few things you will have to do first.

Slimes can spawn in only a tenth of chunks in the Overworld at layers 40 or below at any light level, so they are pretty rare. For a better chance of finding a Slime, you should get to a swamp biome, including mangrove swamps, while it’s dark out. I spawned in these dark waters surrounded by mangrove trees with trailing leaves and waited until night.

Anyone who is hunting Slimes and needs to get quite a few for a challenge will more than likely want to be searching around swamps at night. Find a wide open area of swamp land and get to anywhere between layers 51 to 69. Slimes need space to spawn and cannot appear in crowded areas, so you will need to get to an area with wide, flat plains amongst the mangrove trees or swampy bodies of water. The more space you have, the higher your chances of seeing a larger Slime spawn.

Slimes also love the full moon, and are far more likely to spawn when it is full and bright. This also means they will absolutely not spawn during a new moon. You basically have a more than 50% chance of spawning a Slime if you meet those specifics of light level and altitude.

Hunting Slimes is not too hard as long as you get to the right place at the right time. They are pretty easy to kill too, and if a large Slime (larger than 1) is killed, it spawns between two and four new Slimes slightly smaller. Great news if you are out hunting these bouncing green mobs!
