At some point, you’ll need to start NG+1 to experience the entire story again. There are benefits to this, including retaining all of your levels and weapons, which should give you a big advantage in the early hours of the game.
However, subsequent New Game Plus cycles will also feature stronger enemies with more HP and higher damage values, though they do also drop a lot more Runes than they did before. If you really want to challenge yourself, try to reach NG+7, which is where the enemies stop scaling up, meaning that you’ve truly unlocked the game’s hardest difficulty settings.
